乳名三毛，1950年生于香港，祖籍浙江宁波。他七岁进入中国戏剧学院从于占元学艺，和师兄弟们曾用“七小福”名义活跃于舞台和银幕，是“七小福”的核心人物。十二岁时，洪金宝开始涉足电影，处女作是《公主于七小侠》，十八岁开始当龙虎武师，参演的名作有《龙争虎斗》，1971年开始当武打指导，第一部是《夺命双剑》，他曾获台湾第一届金龙奖最佳武术指导奖。1977年洪金宝开始当主角，第一部是《三德和尚于春米六》（此片也是他导演的第一部影片，是由他创办的嘉宝公司出品的）。  
    他因主演《提防小手》荣获第二届香港电影金像奖最佳男主角奖，后来主演《七小福》，荣获第三十三届亚太影展最佳男主角奖。除了担任导演拍摄《鬼打鬼》〈福星高照〉等片外，他还担当监制《僵尸先生》的工作，之后又创办宝禾和宝祥影片公司，洪金宝领导的洪家班人才济济，涌现不少人才，他对香港电影贡献良多，曾开创黑色功夫喜剧潮流和时装动作片。
